I found myself craving some French toast the other day for dinner. You know what I did? I went straight to my fridge and got out all of the ingredients to make my family breakfast for dinner. Is there anything better? I served it with fresh blueberries my kids and I picked that very afternoon! It was downright delicious and nutritious. My kids gobbled up every last bite and washed it down with a tall cold glass of milk. I was one happy momma with three satisfied kids ages 7 to 15 years old. I call that a win!

Recipe:
Number of Servings - 4
Prep Time - 10 minutes
Cook Time - 5 minutes
Ingredients
1 cup fresh or frozen strawberries 2 eggs
1/3 cup fat-free skim milk
1 tablespoon oil
4 slices whole wheat bread
1/2 teaspoon vanilla extract (optional)
1/8 teaspoon salt (optional)
1 teaspoon powdered sugar (optional)
1/2 teaspoon cinnamon (optional)
1/4 cup blueberries/strawberries/or other seasonal fruit (optional)
Directions
Wash prep surfaces, your hands, and fruit if using fresh.
Cut off tops of strawberries if using fresh. Slice strawberries.
Beat together eggs and milk in a shallow bowl. If using, add vanilla and salt and mix.
Heat oil in a pan over medium heat.
Dunk each slice of bread in egg mixture. Place bread in pan and cook until golden, about 2 minutes per side.
Transfer to serving plate and top with sliced strawberries and blueberries. If using, sprinkle with powdered sugar and cinnamon.
