The transition from summer to fall is a magical time for my family, and it brings with it a sense of excitement and anticipation. As the leaves start to change color and the air becomes crisp, we find ourselves eagerly embracing all the wonderful aspects of this new season.
First and foremost, the cooler weather is a refreshing change. It means cozy sweaters, warm cups of cocoa, and the chance to snuggle up under blankets with our loved ones. We love those chilly autumn evenings spent together by the fireplace, sharing stories and laughter.
Changing schedules also mark the transition to fall. With school starting and extracurricular activities picking up, it's a time of adjustment. But we see it as an opportunity for our family to grow and learn together. We embrace these changes by establishing routines that ensure we make the most of our time together. We set aside dedicated family time, whether it's for a game night, a movie marathon, or simply enjoying a meal together.
One of the highlights of fall for us is the preparation of seasonal recipes. We eagerly anticipate the return of pumpkin-spiced everything, apple pies, and hearty soups. It's a time when we gather in the kitchen as a family, each taking on a role in preparing these delicious meals. Baking pumpkin bread or making a pot of chili has become a cherished tradition.
In terms of recipes, we can't get enough of fall-inspired dishes. A pot of butternut squash soup simmering on the stove is pure comfort. Here's a delicious recipe that's perfect for warming up on crisp autumn days:
Ingredients:
1 large butternut squash, peeled, seeded, and diced
2 tablespoons olive oil
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3 cloves garlic, minced
1 apple, peeled, cored, and chopped
4 cups vegetable or chicken broth
1 teaspoon dried thyme
1/2 teaspoon ground nutmeg
Salt and pepper, to taste
1/2 cup heavy cream (optional, for a creamier soup)
Chopped fresh parsley or chives (for garnish)
Directions:
Prepare the Butternut Squash: Start by peeling the butternut squash using a vegetable peeler. Cut it in half lengthwise, scoop out the seeds, and then dice the flesh into 1-inch cubes.
Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften. Add the minced garlic and chopped apple and continue to cook for another 2-3 minutes until fragrant.
Add the Squash and Spices: Add the diced butternut squash to the pot, along with the dried thyme, ground nutmeg, salt, and pepper. Stir to combine the ingredients.
Pour in the Broth: Pour in the vegetable or chicken broth, making sure it covers the vegetables and squash. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the squash is tender and easily pierced with a fork.
Blend the Soup: Once the squash is tender, remove the pot from heat. Use an immersion blender to carefully puree the soup until it's smooth and creamy. If you don't have an immersion blender, you can transfer the soup in batches to a regular blender, but be sure to allow it to cool slightly before blending.
Notes:
Add Cream (Optional): If you'd like a creamier soup, stir in the heavy cream. You can adjust the amount to your desired level of creaminess.
Adjust Seasoning: Taste the soup and adjust the seasoning with more salt and pepper if needed.
Serve: Ladle the hot butternut squash soup into bowls, and garnish with chopped fresh parsley or chives. You can also add a dollop of sour cream or a sprinkle of grated Parmesan cheese if you like.
